Colourful Food Experiments with Avant-Garde Vegan

Hello. I am Gaz Oakley. I’m 24 years old and from Cardiff, Wales in the UK.  I am a trained chef and now I run Avant-Garde Vegan.

About 11 months ago, after months of friends’ & family’s encouragement, I started a vegan food page.

My idea behind the page was to show people that you can create almost every type of dish using plant based ingredients & show that dairy & other animal products are things of the past!

Since creating the page, the response, feedback and following has been incredible. I often get messages from people telling me how much my food pictures have inspired them to take up a vegan diet – which is my goal.

The demand for my recipes was so high I have now launched a YouTube channel where I will be uploading step by step instructions on how I create my dishes.

As much as I would like to eat all the food I’m always creating for my food page, I workout daily so often I eat high protein & carb meals.

Lots of quinoa, beans, falafel etc. However, I do love cooking Asian food, especially things like katsu curry and noodles. I’m also a keen juicer and I make interesting healthy juices daily. I try and eat raw meals at least once a day – my Raw Vegan Lasagne is one of my favourite dishes!!

My favourite recipe…

My favourite recipe from my Instagram page would have to be my Red Cabbage Soup. It’s a beautiful, light soup which happens to have the most incredible purple colour.

Red cabbage is literally a superfood, and works great with the caraway seeds I added. I then served it with some Horseradish Spiced Coconut Yoghurt. Amazing flavours!!
